Cream of Cauliflower Soup

Ingredients
2 leeks, including 2 inches of green, roots trimmed
2 Tablespoons olive oil
1 Tablespoon unsalted butter
1 celery rib, with extra leaves, coarsely chopped
6 cups chicken or vegetable broth (more if necessary)
½ lemon, juiced
1 head cauliflower, cored and broken into florets
1 cup fat free half-and-half
salt and freshly ground black pepper, to taste
pinch curry powder
pinch ginger
1 clove garlic, minced

Directions
1. Cut leeks in half lengthwise. Wash to remove dirt. Pat dry and thinly slice crosswise.
2. Heat the oil with the butter in a heavy pot over low heat. Wilt the leeks and celery with leaves until softened, 10 minutes; add garlic during the last 5 minutes.
3. Stir in the curry powder and ginger, and cook over very low heat to permeate the vegetables, 1 minute.
4. Add the broth, lemon juice, and cauliflower florets. Raise the heat to high and bring to a boil; reduce the heat and simmer, partially covered, until the cauliflower is very tender, 15 minutes. Cool slightly.
5. Blend in blender, stir in half and half. Add extra broth for desired consistency. Season with salt and pepper.

Crema de Coliflor

Ingredientes
2 puerros, incluyendo 2 pulgadas de la parte verde, con las raíces recortadas
2 cucharadas de aceite de oliva
1 cucharada de mantequilla sin sal
1 tallo de apio con las hojas, cortado en trozos
6 tazas de caldo de pollo o de vegetales (más si es necesario)
½ limón, jugo
1 cabeza de coliflor, sin el corazón y separada en floretes
1 taza de crema sin grasa, mitad y mitad
sal y pimienta negra recién molida, al gusto
1 diente de ajo, picado
pizca de curry en polvo
pizca de jengibre

Instrucciones
1 . Corte los puerros por la mitad longitudinalmente. Lávelos para eliminar la tierra. Sacúdalos para que se sequen y rebánelos finamente de manera transversal.
2. Caliente el aceite con la mantequilla en una olla pesada a fuego lento. Coloque los puerros y el apio con las hojas hasta que esten suaves, 10 minutos, agregue el ajo durante los últimos 5 minutos.
3. Agregue el polvo de curry, el jengibre y cocine a fuego muy lento para que las verduras se impregnen, 1 minuto.
4. Agregue el caldo, jugo de limón y los floretes de coliflor. Aumente el calor a alto y deje que hierva; reduzca el fuego y cocine a fuego lento, parcialmente tapado, hasta que la coliflor esté muy tiernita, 15 minutos. Deje enfriar un poco.
5. Mezcle en la licuadora, agregue la mitad y luego la otra mitad. Agregue caldo extra para obtener la consistencia deseada. Sazone con sal y pimienta.
