Greens, Tomato, and Ricotta Tart

Serves 6-8

Ingredients
8 ounces mixed greens* such as spinach, kale, swiss chard, etc., chopped
2 cloves garlic, chopped
1 basket cherry tomatoes, sliced in half
1 (8-ounce) container ricotta cheese
1 (8-ounce) package mozzarella cheese
1 egg (optional)
1 package puff pastry (in frozen section near pie crust)
olive oil
salt and pepper

Directions
1. Pre-heat oven to 400˚.
2. Warm sauté pan over med-high heat. Add a little olive oil and garlic, stirring garlic until you can smell it, about 10 seconds or so. Add chopped greens and season with a little salt and pepper. Let the greens wilt and turn off the heat.
3. Take puff pastry and unfold it so that it is flat and lay it on a cookie sheet. If you would like the tart to have a golden crust, beat the egg in a bowl and brush on the outer edges of the tart.
4. Top the puff pastry with the chopped greens. Scatter cherry tomatoes around the greens, add spoonfuls of ricotta cheese around the greens, and sprinkle the mozzarella over the top. You can also drizzle with a little extra virgin olive oil, if you like.
5. Bake in oven at 400˚ for 15-18 minutes or so until dough is puffed, lightly browned and cheese is melted. (You can make individual tarts by cutting the tart dough into smaller pieces and topping them the same way, and baking them for the same amount of time.) Remove from oven and let cool. Enjoy!
*Note: Mixed cooking greens can be found in a bag in some stores like Trader Joe’s. You can make your own mix by buying a few different bunches of these greens: kale, spinach, swiss chard, mustard greens, beet greens, dandelion greens, etc.

Tarta de Vegetales Verdes, Tomate y Queso Ricota

Sirve 6-8

Ingredientes
8 onzas de vegetales verdes mixtos*, como espinacas, con rizada, acelgas suizas, etc. picados
2 dientes de ajos, picados
1 canastilla de tomates cherry, partidos por la mitad
1 contenedor (8 onzas) de queso ricota
1 paquete de (8 onzas) de queso mozzarella
1 huevo (opcional)
1 paquete de pasta de hojaldre (en la sección del congelador cerca de la pasta para pie)
aceite de oliva
sal y pimienta

Instrucciones
1. Pre-caliente el horno a 400°.
2. Caliente una cacerola a fuego medio-alto. Añada un poco de aceite de oliva y el ajo; revuelva hasta que huela, aproximadamente unos 10 segundos. Agregue los vegetales verdes y sazone con sal y pimienta. Deje que los vegetales se cuezan y apague el fuego.
3. Saque la pasta de hojaldre y desdoble, una vez que esté plana colóquela en una bandeja para hacer galletas. Si desea que la tarta tenga la cubierta dorada, bata el huevo en un tazón y unte los bordes de la tarta.
4. Coloque los vegetales verdes encima de la pasta de hojaldre. Esparza los tomates alrededor de los vegetales verdes, agregue cucharadas de queso ricota por encima de los vegetales y espolvoree el queso mozzarella por encima. Si lo desea, también puede poner unas gotas de aceite de oliva extra virgen.
5. Cocine en el horno a 400° por unos 15-18 minutos o hasta que la pasta se haya esponjado, esté dorada y el queso se haya derretido. (Puede hacer tartas individuales cortando la pasta en piezas pequeñas, cubriéndolas con los vegetales y cocinándolas por la misma cantidad de tiempo) Retírelas del horno y déjelas enfriar. *Nota: Los vegetales verdes mixtos los puede encontrar en bolsas en algunos supermercados como Trader Joe’s. Usted puede hacer su propia mezcla comprando manojos de vegetales verdes como: col rizada, espinacas, acelgas suizas, hojas de mostaza, hojas de betabel, diente de león, etc.
