Ingredients
3 cauliflower, cut into florets
1½ teaspoons kosher salt, plus ½ teaspoon
3 vine-ripened tomatoes, cut in half
2 cups vegetable broth, plus more as needed
1 large carrot, finely diced
1 large garlic clove, minced
4 cups water
2 Tablespoons olive oil
1 large onion, diced
½ onion, cut in half
2 teaspoons salt
1 bay leaf
1 serrano chile
¼ cup fresh peas
1 bunch cilantro

Directions
1. To make the farro, combine 4 cups water and ½ teaspoon salt in a large saucepan. Add cauliflower and bring to a boil until tender, about 3-6 minutes. Drain well and transfer to a large bowl to let cool. Once cooled, rough chop the cauliflower to make cauliflower rice.
2. To make the broth, combine olive oil, tomatoes, ½ onion and garlic. Char for 6 minutes until all areas are caramelized. Remove from heat and add to a blender with 2 cups broth and cilantro. Puree mixture, strain over a bowl and reserve liquid.
3. To cook remaining ingredients, heat 1 Tablespoon of olive oil over medium-high heat in another large saucepan. Sauté diced onions and carrots until onion is translucent. Add the garlic and sauté for additional minute. Add the tomato broth mixture and bring to a boil. Add salt, bay leaf and serrano chile, cover and simmer, until the mixture is reduced by half (about 20 minutes).
4. Mix in cauliflower rice. Check for seasonings and garnish with peas. Enjoy!

Farro a la Mexicana

Ingredientes
3 cabezas de coliflor, cortadas en ramilletes
1½ cucharaditas de sal kosher, más ½ cucharadita
3 tomates maduros, cortados por la mitad
2 tazas de caldo de verduras, y más, según sea necesario
1 zanahoria grande, finamente picada
1 diente de ajo grande, picado
4 tazas de agua
2 cucharadas de aceite de oliva
1 cebolla grande, cortada en cubitos
½ cebolla, cortada por la mitad
2 cucharaditas de sal
1 hoja de laurel
1 chile serrano
¼ de taza de chicharos frescos
1 manojo de cilantro

Instrucciones
1. Para preparar el farro, combine 4 tazas de agua y ½ cucharadita de sal en una olla grande. Añada la coliflor y déjela hervir hasta que esté tierna, alrededor de 3-6 minutos. Escúrrala bien y transfiérala a un tazón grande para dejarla enfriar. Una vez fría, corte los ramilletes de coliflor en trozos grandes para preparar el arroz de coliflor.
2. Para preparar el caldo, en una cacerola agregue el aceite de oliva, tomates, ½ cebolla y ajo. Cocine hasta que se oscurezcan durante 6 minutos hasta que todas las áreas se hayan caramelizado. Retire del fuego y agregue a la licuadora con las 2 tazas de caldo y el cilantro. Mezcle en forma de puré, cuele sobre un tazón y reserve el líquido.
3. Para cocinar los ingredientes restantes, caliente 1 cucharada de aceite de oliva a fuego medio-alto en otro sartén grande. Sofría las cebollas y las zanahorias hasta que la cebolla esté translúcida. Agregue el ajo y sofría por un minuto más. Añada la mezcla de caldo de tomate y déjela hervir. Agregue la sal, el laurel y el chile serrano, tape y cocine a fuego lento, hasta que la mezcla se reduzca a la mitad (unos 20 minutos).
4. Mezcle con el arroz de coliflor. Rectifique el sazón y decore con los chicharos. Disfrute!
