Three Sisters Corn Muffins

Makes 12 Muffins

Ingredients
1 cup flour
1 cup cornmeal
½ teaspoon salt
2 teaspoons baking powder
4 Tablespoons honey
2 eggs
1 cup reduced fat milk
4 Tablespoons applesauce
1 bunch cilantro, chopped
1 jalapeño, finely chopped
1 ear of fresh corn (or a ½ cup of canned corn or ½ cup frozen corn)
½ cup grated low-fat cheese, such as cheddar, colby jack, etc.

Directions
1. Preheat oven to 400˚. Line muffin pan with muffin cups or spray with non-stick spray.
2. Grate cheese, chop cilantro and jalapeño, and remove corn from cob. Set aside.
3. Combine flour, cornmeal, salt, and baking powder in one bowl. Whisk together.
4. Combine honey, eggs, milk, and applesauce in another bowl. Whisk together.
5. Combine dry ingredients and wet ingredients into one bowl and mix together. Do not over mix!
6. Add chopped cilantro and jalapeño to mix.
7. Fill muffin cups 2/3 full. Top with fresh corn kernels and shredded cheese.
8. Bake for 10-15 minutes. Enjoy!

DID YOU KNOW??
Did you know that when you are baking, you can cut the amount of oil you use by substituting applesauce?? Applesauce is easy to make at home, too!! I use a variety of sweet apples… nothing too sour… and slice, leaving the skins on. Place into a pot, sprinkle with cinnamon, add some water… just enough so that the apples are almost covered… and boil until apples are soft. Blend with a masher, mixer, or a blender until you’ve reached your desired consistency!! Enjoy!

Muffins de Maíz Tres Hermanas

Ingredientes
1 taza de harina
1 taza de harina de maíz
½ cucharadita de sal
2 cucharaditas de polvo para hornear
4 cucharadas de miel
2 huevos
1 taza de leche baja en grasa
4 cucharadas de puré de manzana
1 manojo de cilantro, picado
1 jalapeño, finamente picado
una mazorca de maíz fresco (o ½ taza de maíz enlatado o ½ taza de maíz congelado)
½ taza de queso bajo en grasa, puede ser cheddar, colby jack, etc.

Instrucciones
1. Precaliente el horno a 400˚. Prepare el molde de muffins con moldecillos de papel o rocíelo con aceite en spray antiadherente.
2. Ralle el queso, pique el cilantro, jalapeño, y separe el maíz de la mazorca. Déjelo a un lado.
3. Combine la harina, harina de maíz, sal y polvo de hornear en un tazón. Mezcle.
4. Combine la miel, huevos, leche y puré de manzana en otro tazón. Bata.
5. Combine los ingredientes secos con los húmedos y mezcle. No mezcle de mas!
6. Agregue el cilantro picado y el jalapeño a la mezcla.
7. Rellene los moldes 2/3 partes. Cubra con granos de maíz y queso rallado.
8. Hornée durante 10-15 minutos. Disfrute!
