Tortilla Espanola

Tortilla Espanola
Serves 4-6

Ingredients
2 Tablespoons green onions, chopped
2 Tablespoons fresh basil, chopped
1 small yellow squash or zucchini, grated
5 large eggs
1-2 Tablespoons of olive oil for pan
salt and pepper to taste

Directions
1. Pre-heat oven at 400˚.
2. Place the grated squash, chopped green onion, and chopped fresh basil into a bowl and set aside.
3. Crack the eggs into a large mixing bowl and beat by hand with a whisk or fork.
4. Pour the egg mixture in with all the other ingredients and mix together with a large spoon.
5. Add salt and pepper.
6. Pour 1-2 Tablespoons of olive oil into a small, non-stick frying pan (approx. 6-8”).
7. Place on the stove at medium-high. When hot, stir the mixture once more and pour into the pan and spread out evenly. Allow the egg to cook around the edges (about 1 minute or so).
8. Place the pan in the preheated oven for about 5 to 7 min. Keep an eye on it so it doesn’t burn.
9. Once it is slightly browned, it’s ready to come out of the oven. Carefully take the frying pan to a sink. Place a large dinner plate (12”) upside down over the frying pan. With one hand on the frying pan handle and the other on top of the plate to hold it steady, quickly turn the frying pan over and the omelet will “fall” onto the plate.
10. Slice it into 6 pieces like a pie and enjoy!

Note: You can also serve with some sort of sauce such as a Spanish tomato sauce, chunky guacamole or even an avocado cream sauce.

Tortilla Española
Para 4-6 personas

Ingredientes
2 cucharadas de cebolla verde, picada
2 cucharadas de albahaca fresca, picada
1 calabaza amarilla pequeña o calabacín, rallado
5 huevos grandes
1-2 cucharadas de aceite de oliva
sal y pimienta al gusto

Instrucciones
1. Pre-caliente el horno a 400˚.
2. Coloque la calabaza rallada, la cebolla verde y la albahaca fresca picada en un tazón, mantengalo a un lado.
3. Quebre los huevos en un tazón grande para mezclar y bata a mano con un batidor o con un tenedor.
4. Agregue la mezcla de huevo a todos los demás ingredientes y mezcle con una cuchara grande.
5. Añada sal y pimienta.
6. Agregue 1-2 cucharadas de aceite de oliva en un sartén antiadherente pequeño para freír (aprox. 6-8″).
7. Coloquelo en la estufa a fuego medio-alto. Cuando esté caliente, agite la mezcla una vez más y vierta en el sarten, extienda uniformemente. Permita que el huevo se cocine alrededor de los bordes (aproximadamente 1 minuto).
8. Coloque el sartén en el horno precalentado durante unos 5 a 7 min. Mantenga un ojo en él para que no se queme.
9. Una vez que se dore ligeramente, ya está listo para salir del horno. Con cuidado, lleve el sartén cerca del fregadero. Coloque un plato grande (12″) boca abajo sobre el sartén. Con una mano en el mango de la sartén y la otra en la parte superior del plato para mantenerlo estable, gire rápidamente el sartén y la tortilla “caerá” en el plato.
10. Cortela en 6 piezas como si fuera un pastel y disfrutela!

Nota: También se puede servir con algún tipo de salsa, como una salsa española de tomate, guacamole o una salsa de crema de aguacate.
