Ingredients
  

  • Ingredients for Shrimp Marinade
  • 1 pound Mexican gulf shrimp peeled and deveined
  • 1 green onion sliced thinly
  • 1 teaspoon dried oregano
  • 1 Tablespoon smoked paprika
  • ¼ teaspoon ground cumin
  • 1 Tablespoon lime juice
  • 1 Tablespoon citron oil
  • 3 cloves garlic
  • 1 teaspoon red chili flakes
  • Ingredients for Lime Crema
  • 1 cup Greek yogurt
  • 1 teaspoon honey optional
  • 1 tablespoon lime juice
  • 1 teaspoon citron oil
  • 1 teaspoon cumin
  • salt and pepper to taste
  • 1 teaspoon chipotle in adobo sauce
  • Remaining Ingredients
  • 1 Tablespoon coconut oil
  • 1 head butter lettuce wedges removed
  • 2 roasted poblanos seeded, skinned, and julienned*
  • 2 Tablespoons fresh cilantro
  • 1 Tablespoon fresh oregano
  • 1 teaspoon chili salt
  • 2 avocados sliced
  • 1 cup red cabbage shredded
  • 1 Tablespoon toasted pepitas
  • 3 guavas seeds removed, sliced in wedges

Instructions
 

  • Directions for Shrimp Marinade
  • In a medium bowl, toss shrimp with ingredients above and marinate for at least 30 minutes.
  • Directions for Lime Crema
  • Combine all ingredients and adjust seasonings to taste.
  • Directions for Spicy Shrimp Lettuce Wraps
  • After shrimp have marinated for at least 30 minutes, heat 1 Tablespoon coconut oil in a large non-stick pan over medium-high heat and sauté shrimp for about 3 minutes, turning once or until done (light pink). Remove from heat and toss with lime juice, cilantro, oregano, and chili salt or chili flakes.
  • Assemble your lettuce wraps… take a piece of butter lettuce and add sliced avocado, grilled apricots, sliced poblanos, shrimp, red cabbage, lime crema and a few toasted pepitas.
  • *Roasted Poblanos: You can either char the poblano chilies directly over the gas flame on the stove or under a broiler until blackened on all sides. Enclose in a plastic bag or bowl wrapped in plastic and let steam for about 10 minutes. Peel, remove seeds from chilies, and cut into ¼-inch slices.
