Summer Berrylicious Pops

Servings 8 Popsicles

Equipment

  • Popsicle molds or paper cups and wooden sticks (for 8 popsicles)
  • Blender or food processor

Ingredients
  

  • 2 cups fresh berries such as strawberries, blueberries, raspberries, blackberries, or all of the above!
  • 2 cups plain yogurt
  • 1/3-½ cup honey
  • 1 teaspoon vanilla extract
  • 8 popsicle molds or 8 paper cups and wooden sticks

Instructions
 

  • Combine the berries of your choice, yogurt, honey and vanilla in a blender or food processor. Blend until all the ingredients are well combined then pour into popsicle molds or paper cups. (If using paper cups, place a wooden stick in each cup.) Put into the freezer for about 4 hours, or until they are completely frozen. Enjoy on a warm, sunny day!

Notes

Tips
  • If you are having trouble getting the sticks to stay in place in the paper cups, use a piece of foil atop the cup to hold the stick in place.
  • Try blending in different herbs like fresh basil or mint before freezing.
  • Experiment with other yummy fruits such as nectarines, peaches, bananas and mangoes.
  • Make layered popsicles by filling the mold or cup part way and adding different fruit yogurt combination’s and freezing one layer at a time.
