Zucchini and Corn Pirate Boats

Serves 8
Ingredients for the Boats
2 medium zucchini, sliced lengthwise and then in half
Directions for the Boats
1. Bring a medium saucepan with salted water to a boil over medium-high heat. Add the zucchini and cook for 3 minutes until slightly tender.
2. Remove the zucchini and allow to cool. Carefully scoop out the insides of the zucchini halves with a small spoon. Reserve the cored halves and the insides for the boatās filling.Ā
Ingredients for the Filling
Ā½ cup onion, finely minced
salt and freshly ground black pepper
1 garlic clove, minced
2 vine ripened tomatoes, seeded and chopped
1 small zucchini, diced
1 cup fresh corn kernels (from about 3 ears of corn)
1Ā½ teaspoons chopped fresh cilantro
olive oil
1 cup grated cheese
Directions for the Filling
1. Preheat oven to broil.
2. Preheat a medium, heavy sautĆ© pan over medium heat with olive oil. Add the onion and cook until translucent.Ā Add the reserved zucchini filling and cubed zucchini and cook for 1 minute. Add the garlic and cook until fragrant, about 30 seconds. Add the corn, cilantro, tomato and stir occasionally until zucchini is tender, about 5 minutes. Season with salt and pepper, to taste.
3. Fill the zucchini boats with the filling and top with grated cheese. Place on cookie sheet lined with parchment paper or non-stick cooking spray and broil for a few minutes, just until the cheese has been melted.Ā
Ingredients and Directions for the Masts
1 (4 to 6-inch) skewer or toothpick
1 zucchini slice, halved
Thread the slice of zucchini onto each skewer. Place onto the end of each zucchini boat. ENJOY!Ā

Barcos PiratasĀ de CalabacĆtaĀ y Elote

Ingredientes Para Los Barcos
2 calabacĆtas medianas, cortadas a lo largo y luego a la mitad
Instrucciones Para Los Barcos
1. En una olla mediana, ponga a hervir agua con sal a fuego medio-alto. AƱada las calabacĆtas y cocine por 3 minutos hasta que se ablanden ligeramente.
2. Retire las calabacĆtas y dejelas enfriar. Con mucho cuidado, corte las calabacĆtas a lo largo y saque el interior con una cuchara pequeƱa. Reserve las mitades y el interior para rellenar el barco.
Ā Ingredientes Para El Relleno
Ā½ taza de cebolla, finamente picada
sal y pimienta negra, reciƩn molida
1 diente de ajo, finamente picado
2 tomates maduros, sin semilla y picados
1 calabacĆta pequeƱa, cortada en cubitos
1 taza de granos frescos de elote (alrededor de 3 elotes)
1Ā½ cucharadita de cilantro fresco, picado
aceite de oliva
1 taza de queso rallado
Instrucciones Para El Relleno
1. Pre-caliente el horno en la secciĆ³n de asado.
2. Pre-caliente un sartĆ©n mediano, agregue un poco de aceite de oliva y sofrĆa la cebolla a fuego medio, cocine hasta que estĆ© transparente. AƱada el interior de la calabacĆta que habia reservado previamente asi como la calabacĆta en cubitos y cocine durante 1 minuto. AƱada el ajo y cocine hasta que la mezcla aromatice unos 30 segundos. AƱada los granos frescos de elote, cilantro, tomate y revuelva ocasionalmente hasta que las calabacĆtas esten tiernitas, aproximadamente 5 minutos. Sazone con sal y pimienta al gusto.
3. Llene los botes de calabacĆta con el relleno y cubralos de queso rallado. PĆ³ngalos en una bandeja para hornear forrada con papel pergamino (parchment paper) o aerosol antiadherente. Aselas durante unos minutos, hasta que el queso se haya derretido.
Ingredientes y Instrucciones Para Los Mastiles
1 (4 a 6 pulgadas) palito para brocheta o palillo de dientes
1 calabacĆta rebanada a lo largo
Inserte una rebanada de calabacĆta en el palito de brocheta o palillo de dientes.Ā Coloquelo en alguno de los extremos de cada barco de calabacĆta. Disfrutelos!
